Instructions: In a 2 quart pot bring 4 cups of water with 1 Tbs olive oil (optional) to a boil. Add the contents of the bag, stir well, and simmer for 5 minutes (or a bit longer at higher elevations). Turn off the heat and let stand for another 5 minutes. Remove bay leaves before serving.

Serve with some avocado or a dollop of vegan sour cream and a slice of crusty bread.

Serving Suggestion: For added crunch and color stir in a few tablespoons of frozen or canned sweet corn.
